Yaentucasa caramelized onions with raisins is a very versatile product:
perfect for meats, cheeses or for snacks.
In this recipe I wanted to let them in their natural way, with its sweet side to balance the strong flavor of the sausage and the “pecorino” Italian cheese.

INGREDIENTS (for two)
- 1 jar of “caramelized onions with raisins
- 200 g pasta (macaroni or paccheri)
- 3 sausages
- Half a glass of dry white wine
- Black Pepper
- Olive oil extra virgin Oleoconil
- Salt
- Cheese Pecorino Romano DOP or, alternatively, a mature sheep’s cheese

PREPARATION:
Cut the sausage and put them in a nonstick pan with a little oil.
While cooked with a wooden spoon cut those parts; then add a pinch of salt, wine and let evaporate well.
Pepper in abundance and gradually add the onions, also using a bit of their own liquid.
Simmer a few minutes the mixture and turn off the flame. Drain the pasta and pour the sauce and, if necessary, add a little oil.
Serve with grated pecorino cheese overhead and a little black pepper
