VINICULTURE

Produced from a unique blend of Syrah, Merlot, Petit Verdot, Tempranillo and Cabernet Sauvignon.  Each grape variety is cared for in a different way under integral cultivation, being close to organic viticulture. Production is from 3500 - 5000 kg/ha, controlled through selective thinning out of the grapes.
The small scale harvest is carried out manually with the selection of the grapes in the vineyard and then in the cellar. After each variety is vinified separately in stainless steel tanks then Luis Perez selects the best and ages this blend in for 12 months in French oak barrels. The wine is bottled with no filtering nor clarification. After a year in the bottle it is ready to drink.

TASTING NOTES
A deep cherry red colour, alive and bright. Intense and perfumed, with a complex combination of cherries in liquor, spices, herbs, cocoa, graphite and truffle. Full bodied with a finish of memories of chocolate.

ACCOMPANIMENTS
Serve with grilled vegetables, most game but particularly duck or rabbit, fish in sauce, light stews or casseroles. Also delicious as a dessert wine with quinces or chocolate.
