The tuna underbelly is located in its inferior part covering the cavity that houses the organs of the tuna and that serves as a protection, hence its high fat content. It is without doubt the most juicy and rich in fat part of the tuna, being the most appreciated part of the workpiece. Given its characteristics we can use it in different ways.
