Tuna belly is the lowest part of the Lomo Blanco, in Japan it is known as "Toro". It is the part of the Bluefin Tuna that has a higher percentage of fat. Tuna belly wild bluefin tuna (Thunnus thynnus thynnus) is characterized by its pinkish color and by the streaks of fat that are interspersed in its meat. It is typically used for the preparation of Japanese dishes such as Sushi, Sashimi or to be cooked on the griddle. It is also used to perform a semipreserved which is called "Flank Tuna"
